A year and 1/2 ago, our church burned to the ground.
WITH THE HELP OF OUR CITY, LOCAL SCHOOL, AND THE COMMUNITY...
THE CHURCH IS REBUILT.
WE HELD A THANK YOU COMMUNITY BARBECUE.
Beside the usual suspects... Hamburgers, hot dogs, BBQ pulled pork sliders, side dishes and desserts...
Here is a 'way too simple' Chicken Salsa Slider that was the hit of the barbecue.
  1. 10 - lbs of pulled chicken (light and dark meat).
  2. 4 - 24oz bottles of Salsa (We used Great Value Peach/Pineapple Chipotle Salsa).
  3. 4 - 20 oz cans of Dole pineapple bits in pineapple juice (no sugar/syrup added)
  4. 6 - 8 dozen dinner rolls
Here is the easy part. Puree the pineapple bits, add the salsa, pour over the pulled chicken. Heat to 145, and serve your Chicken Salsa Slider on the dinner rolls. (Guard your fingers they go fast).
Latin Pop music goes with the barbecue if you don't have that Earth Wind and Fire works too.
